Winemaking: white with direct pressing of the whole grapes. Use of the entire grape-must and the first fraction of the pressed grape. Cold settling for 12/18 hours followed by tranfer into a different container. Alcoholic fermentation in stainless steel tanks with controlled temperature. Aging in steel for 3/4 months.
Classic Method Sparklingwine: second fermentation with 18/30 months on yeast in bottle. Alcohol 12/13 vol%. total acidity: 8,0 g/l.
Colour: yellow with fine and persistent perlage. Bouquet: elegant with delicate notes of mayflower and white fruit with scents of yeast and crusty bread. Flavour: fresh, dry, with crispy bubble, very persistent with a long finish type tannic/acid. Serving temperature: 6-9 °C.
